Cà Phê Muối – Salt Coffee

Vietnamese salt coffee from the Huế tradition. The intensity of Robusta meets the sweet counterpoint of salty whipped cream — a surprising and authentically Vietnamese taste experience.

Ingredients

  • 22 g dark roasted robusta grind
  • 80 ml hot water (approx. 95 °C)
  • 60 ml heavy cream
  • 2 tbsp condensed milk
  • ¼ tsp sea salt
  • Ice cubes (optional)

Instructions

  1. Place the phin filter on top of the cup. Add coffee grounds and level the surface.
  2. Pour 30 ml of hot water, let bloom for 20–30 seconds.
  3. Fill with the remaining water, let it drip through for about 4 minutes.
  4. Whisk heavy cream, condensed milk, and sea salt into a thick, foamy mixture.
  5. Pour coffee into a glass (+ ice if desired). Spoon the salty cream on top to float.
  6. Serve without stirring — drink through the cream.

Tips

Do not substitute robusta with arabica — bitterness is essential for the contrast. The amount of salt can be increased up to ½ tsp for a stronger contrast.
